Acetylated distarch adipate (E1422) is a food additive of the thickening agent type, and more specifically a bulking agent. It is also used as a stabilizer. This is an additive belonging Acetylated Distarch Adipate, also known as E1422, belongs to the group of modified starches. It is formed by acting on starch with acetic anhydride and adipic anhydride. However, the degree of starch modification is limited by the fact that E1422 is approved for use in food. The proportion of adipic acid and acetyl groups should therefore not exceed 0.135% and 2.5%, respectively
The Acetylated Distarch Adipate obtained in this way has much better properties than native starch, as it has a high processing tolerance. First of all, E1422 is resistant to retrogradation, a process in which hydrogen bonds form after dissolution and cooling, organizing the starch chains into a gel. In addition, Acetylated Distarch Adipate is more stable under stirring and at high temperatures and is also more viscous than starch. It is also soluble in hot and cold water. In addition, it is stable over a wide pH range, meaning it is resistant to acidic and alkaline environments. E1422 is also freeze and thaw stable and can be stored in a cool place
E1422 functions
E1422 has many functions that are used in the industry. First, it has an impressive thickening ability due to its viscosity. As a thickening agent, it is very transparent. When added to various products, it gives them a shiny appearance, making them more attractive to customers. It is also well compatible with other types of thickeners, which increases its usefulness.
E1422 is very stable at both high and low temperatures when frozen, so it is also used as a stabilizer. It increases flexibility and improves the surface of the final product. It also has good structural anti-decomposition properties that minimize chemical melting of semi-liquid products, i.e. it extends shelf life
In emulsion-type products, it acts as an emulsifier. It also has the ability to keep water stable over a long period of time, i.e. it minimizes the leakage of frozen products.
E1422 applications
Due to its properties and functions, E1422 is mainly used in the food industry. It is used as a bulking agent, stabilizer and thickener and also benefits from its texturizing and gelling functions, i.e. it generally gives the right texture to processed foods.
It is found as an emulsifier in products that take the form of an emulsion, such as mayonnaise or margarine. It is also an ingredient in frozen products such as frozen pastries or meat pies and ice cream. In addition, E1422 is used in the production of various sauces (chili, soy or tomato), ketchups, jams, jellies, desserts, fruit fillings, canned meats, pudding powders, drinking yogurt or whipped cream, but also in the production of sausages, meatballs and fishballs.
E1422 is sometimes also used as a substitute for gelatin. It can also be used as a binder in fish feed.
Besides the food industry, E1422 can also be used in the production of cosmetics or glues, biodegradable plastics and microcapsules.to the family of modified starches.
