Cochineal (Dactylopius coccus Costa) is a valuable economic resource insect of the order Homoptera. Its scientific name is Dactylopius coccus. It is native to Mexico and Central America and its host is Opuntia Nill. Mature insects contain a large amount of carminic acid, which accounts for about 19% to 24% of the body weight of dry insects. There are large areas of dry and hot valleys in southwest China that are suitable for the growth of cacti and can develop cochineal breeding. Cochineal contains carmine (C22H20O13), which can be prepared into carmine pigment and is widely used in food, cosmetics and other industries.

Food grade Pigment E124
1. Cochin eal red pigment is a natural pigment extracted from the fertilized female Cochin eal worms growing on cacti. The main component is carminic acid. 2. The color of cochineal extract varies depending on the PH, ranging from orange to red. The strength of carminic acid is not very large, and when combined with aluminum ions, the color value increases to form aluminum ions. Cochin eal aluminum is an aluminum hydroxide chelate of cochin eal acid, a water-dispersible powder, easily soluble in water but insoluble in alcohol and oil. 3. Red cochineal and curcumin, annatto, red chili, β-carotene, etc. can be put together to form a series of products with different shades.
